Traditional cookery, technology and excellent service
The restaurant is established in a large 17th century house and has been submitted to internal refurbishment with decoration in good taste provided by chef Ana Bueno herself and her husband, resulting in a welcoming environment that proposes to serve meals that give value to local ingredients.
The idea of combining local culture with culinary techniques is strictly followed. The kitchen is fitted with a cold storage, vacuum equipment and smoking chamber, among other devices to produce creative recipes. The service is another attraction: the waiters in their attractive uniforms and elegant panama hats comply with the establishment’s standards, always courteous and affable. The tableware stimulates the eating experience, which is enriched with the different china employed for each dish, and is designed by ceramist Gisele Gandolfi.
The most ordered among the delicious fish recipes are the traditional fish with plantains in a clay pot, or octopus in white wine. Shrimp with cream and port wine is also a much requested dish. The menu lists surprises such as moqueca (stew) with plantains, palm hearts and peppers with the local farofa (toasted cassava meal). Caipirinhas go well with the food, made with the traditional Paratiana cachaça in unusual combinations such as tangerine with basil leaves, passion fruit with pineapple and lemongrass, cashew with lemon, pineapple and chili pepper, as well as the classic lime caipirinha. Not to be outdone, the house has a cellar with 150 labels of quality wine.
The restaurant’s website displays a number of the chef’s incredible recipes. In 2008, she published the book Culinária caiçara – o sabor entre a serra e o mar on regional cooking written jointly with anthropologist Antônio Carlos Diegues. Ana Bueno was also the creator of Folia Gastronômica de Paraty, a much sought after culinary festival that has held its sixth edition. Banana da Terra restaurant is also a member of Associação dos Restaurantes da Boa Lembrança, which allows customers to try a special recipe and take with them the beautiful ceramic plate as a souvenir. It is also possible to retain the restaurant’s services through its website by contracting Bufê Banana da Terra and ordering a personalized menu created for each party or event, with regional cooking and an impeccable service.
