The land of cachaça also produces beer

Paraty is known for its cachaça stills, yet few people are aware that beer is also brewed there. The premium Caboré beer has been produced here since 2006. Its name is the tupi-guarani for a small owl.

In addition to the impeccable hygiene, this modern micro-brewery employs special care in production: the water used is obtained from the mountains and is double-filtered. Bottling is manual in disposable bottles. There are also precautions with the ecology: production residues are recycled, with one part converted into animal feed and another into fertilizer, and donated to dairy farms.

One of the Caborê beer’s major differentials is the use of pure malt without the use of brewing adjuncts – non-malted cereals such as corn and rice – besides the absence of the usual final filtering process, which eliminates yeast completely and leaves the beverage almost transparent. The beer therefore retains slight touches of yeast until it is consumed. The outcome is a creamy and refreshing beverage in its Pilsen light and dark versions, and the award-winning wheat beer.

It is possible to order regional or German-style dishes and savories in the restaurant next to the brewery, which go perfectly with the Caborê handcrafted beers and drafts, besides the caipirinhas made with the best cachaças in Paraty. The atmosphere is welcoming with an attractive bar, where it is possible to acquire kits with the local beer and souvenirs bearing the cute little owl brand, and open-air tables in a pleasant garden. There is a happy hour on Saturdays from 6 pm to 8 pm featuring live music and with the promotion of the double draft beer.

Guided tours including tasting sessions take place on Wednesdays and Saturdays, at 5 pm sharp. Scheduling is not required, except for large groups.
